Savory Roasted Carrots

Carrots are a root veggie packed full of natural sweetness, plus they are a good source of antioxidants and vitamins A, C, E, & K.  I love that carrots come in all sorts of colors such as orange, yellow,  purple, white and red!! Carrots are loaded with fiber which is also important for digestive health. They are not short on health benefits including potential to lower blood pressure, boost immunity, and improve eyesight. This carrot recipe is an easy weeknight side dish that is easy to make and will nourish your body. Enjoy!

Savory Roasted Carrots

These carrots are packed with vitamins and minerals and the recipe is a nice combination of natural sweetness & savory flavors from the fresh herbs.

  • 1 bunch fresh carrots
  • 1 tbsp olive oil
  • 4 sprigs fresh rosemary
  • 1 tsp cardamon pwd
  • 1 tsp sea salt
  • 1 tsp fresh ground pepper
  • 1/4 cup raw pistachios


  1. Preheat oven to 400 degrees 

  2. Wash and peel all carrots

  3. Cut carrots lengthwise, if they are smaller carrots you can leave them whole

  4. Line a baking sheet with parchment paper and spread carrots evenly on baking sheet 

  5. Drizzle with olive oil, sea salt and pepper. Make sure they are well coated

  6. Add the fresh whole rosemary sprigs in the pan with with carrots 

  7. Roast in the oven for about 40 minutes, until cooked through but not too soft

  8. Once out of the oven, add the raw pistachios and serve 

Rosemary is native to the Mediterranean region and is one of the most commonly found spices on the spice rack. I prefer using fresh rosemary, it has wonderful aroma and add a nice warm touch to veggie dishes.
